Zucchini fritters are my favourite at this time of year. With an abundance of zucchini's in any home with a vegetable garden, they are the perfect way to create a quick, nourishing and light meal for a warm summer's evening. This is my favourite way to enjoy zucchini fritters, but try experimenting in other ways too, by substituting one zucchini for carrot, or adding in corn or finely chopped bacon. Ingredients 3 zucchini's, grated 1 teaspoon himalayan pink salt 1/2 teaspoon paprika 1 egg 1 teaspoon baking soda Directions Place a clean tea towel or muslin cloth drapped over a large bowl. Grate the zucchini's and place on top of the cloth. Sprinkle over the salt and mix the salt into the zucchinis slightly with your hand. Leave sitting in the tea towel for 2-3 minutes for the zucchini to absorb the salt - this helps extract the moisture out of the zucchini's. Lift the corners of your tea towel up, twist the towel tightly to squeeze the zucchini so all the liquid squeezes out and into the bowl. Do this for a minute or so to ensure you extract as much liquid as you can - the drier you can get your zucchini, the better your fritters will hold together. Once this is down, discard the liquid from the bowl and tip the zucchini into a dry bowl. Add the egg to the bowl and mix well. Sprinkle over the paprika and baking soda and mix well to combine. Heat 1 tablespoon of coconut oil in a fry pan over a medium heat. Place spoonfuls into the pan to make a fritter shapes, and cook for around 5 minutes per side, or until the egg is set and each side is turning golden and brown. This should make enough fritters for two people to have 3 fritters each. Serve with a fresh garden salad to make a complete and delicious tasting meal.
