Homemade muesli has always been one of my preferred choices of breakfast. To me, it meets so many of the requirements that I personally want from my breakfasts - energy dense, nutrient dense, the chew factor (chewing is a great stress reliever, believe it or not), low sugar, and it keeps me full for ages. The supermarket versions of muesli are unfortunately often filled up with things that our body's don't really love - such as sugar, trans-fats, artifical perservatives and highly processed grains. This homemade muesli has been one of my go-to recipes for nearly 10 years. It's one I created a long time ago to meet what I wanted out of my muesli, as well as tasting delicious. And if you are anything like me, you like to do it once and do it well - hence the large quantities! I make a big batch so it lasts me for weeks and I don't need to remake it all the time. Feel free to half the recipe if you think it's too much for you. Homemade Muesli 5 cups of Wholegrain Oats ¼ cup of coconut oil ¼ cup of honey 1 cup each of pumpkin seeds, sunflower seeds, sesame seeds, 1 cup chopped nuts of your choice – walnuts, almonds, brazil nuts etc. 1 cup of chopped dried fruit of your choice – apricots, cranberries, raisins, goji berries etc. ½ cup of shredded coconut Directions Preheat the oven to 180 degrees. Melt the coconut oil and honey together in a saucepan over a low heat. Spread the oats in a large oven dish and drizzle the oil and honey over the top, and mix to combine. Place oats in oven and cook for 12-15 minutes, or until slightly golden. Check oats half way and mix with a spoon. Once cooked, and partially cooled, tip the oats into a large mixing bowl. When completely cooled, add all remaining ingredients and stir well. Transfer into an airtight container and store in a cool and dark place. Enjoy!
