These black bean, gluten-free, dairy-free and refined-sugar free muffins are deceivingly good...so good that the children in my house beg me to make them. I'm not a big baker, so when I do bake the only criteria I have is that it has to be fast, easy and not create very many dishes to wash, so creating this recipe to taste good and meet my bakers criteria has been a large success. BLACK BEAN CHOCOLATE MUFFINS
Add everything except baking powder and chocolate into a blender, blend until smooth and pour into a bowl. Add the baking powder and chocolate chunks and fold together until mixed. Pour into muffin trays and bake at 180 degrees for about 25 minutes or until cooked. Cool and enjoy! Want more recipes like this?
