Here's one for the kids (or if you are like me, the inner kid within you who still loves a chocolate chip biscuit!) Would you believe me if I said these only had TWO INGREDIENTS?!!! These biscuits are a new favourite in our house. I have never been a person to overly enjoy baking biscuits, but these ones are so easy and quick, and taste amazing - plus they are super nourishing for you. Give them a try - if my daughter who absolutely WILL NOT eat banana's, loves them AND loves making them, then they have to be a winner!
Ingredients: 2 banana's 1 cup of oats Optional: 1/4 cup extras - dark chocolate chips (our favourite), raisins, coconut, dried apricots all work well. Directions: Preheat the oven to 190 degrees. Peel and mash the banana's with a fork in a large bowl. Add the oats and mix well. Add the optional extra's if using, and mix well again. Line a baking tray with baking paper. Scoop small handfuls of the banana and oat mixture, roll into firm balls in your hands, and place spread out on baking paper. Once all the mixture has been rolled into balls, using the back of a fork, gently press the balls to flatten slightly until about 1cm thick. Place in oven and bake for 18-20 minutes, or until starting to turn golden. Remove from oven, cool on a wire rack and enjoy!
